It seems to be harder and harder to find some time to get on here to do a post….if only i had a laptop i think it would be much easier to grab some snatches of time…ah well!!
When the girls and i collected the eggs yesterday we found this overachiever!
It was indeed a double yolker and all i can think was ‘blimey that must have hurt to get out!!' We are really lucky that the girls are laying an egg a day at moment and therefore 3 chooks is more than enough to keep our family supplied with eggs. In fact, i currently have 3 cartons in the fridge at the moment so have been trying to get some baking done and we have been eating a lot of quiches and omelettes!
I am making one of my all time favourites for dinner tonight…Impossible Pie. I'm sure many would have had this dessert, it was often on the table in my youth and i made sure to write the recipe down to take with me when i left home. To be honest i got tired of calling Mum all the time to write down recipes for me that i was used to making when living at home and ended up ‘borrowing' one of my fav cookbooks when i was home visiting at one stage.
It is looking very sad now and has seen many repairs and much use but i just love all the recipes in it and it reminds me of childhood. This was compiled by the Caloundra Soccer Club and i still always pick up club and school compiled cookbooks if i see them at garage sales and op shops as they just have such history and are usually filled with recipes much loved and used by families through the generations. Do you have any cookbooks that are part of your history?
Impossible Pie is one of those amazing recipes that you can just throw everything into the one bowl, beat and then pour into a dish for baking. The flour settles to form the crust, the coconut forms the topping, and the centre is an egg custard filling. If you omit the milk, it makes a beautiful coconut teacake.
IMPOSSIBLE PIE
4 eggs
1/2 cup butter(or marg)
1/2 cup plain flour
2 cups milk
1 cup sugar (i use 3/4 cup)
1 cup coconut
2 tsp vanilla
Beat all ingrediants together in a large bowl and pour into a 25cm greased pie plate. Bake at 180 degrees (celsius) for 1 hour until centre is firm.
That's it! Yum! Doesn't last long here but lovely served with cream or ice cream.Sorry no photo!
I also use a few eggs every second dayor so by making egg custard for the girls as they love it and we go through a lot with stewed fruit. I have noticed quite a few recipes on blogs lately for egg custard and this one is quite basic in comparison but still creamy and nice for all the family. I have modified it a little to make in the microwave as i was forever curdling it on the stove and just never had the time for all the stirring!
MICROWAVE EGG CUSTARD
600ml milk
1 tbls sugar
2eggs
2tbls cornflour
1/2tsp vanilla (not essence)
Measure 600ml milk into a microwave proof jug and in a separate bowl beat together all other ingredients with a small amount of the milk. Heat the milk in microwave for 2 mins then whisk in the egg mixture. Then continue heating in microvave for short bursts (i do about 30-40secs) and whisking each time….usually only takes another few minutes before it is thick and creamy and no burnt saucepans to deal with (but perhaps that is just me!) Just half this recipe if you want less custard, we go through so much i decided to make a big batch each time…enjoy!
Time to get going before toddlers wake…..my goodness they are a tiring age…always on the go, tantrums galore and not wanting to share mummy…which is a problem when there are 2 toddlers and only 1 mummy! We try to keep busy with outside activities and craft but i'm not sure who ends up more tired…mummy or toddlers! Perhaps i am just feeling old as it is my birthday tomorrow and i am turning 39…i'm not worried about getting older….just wondering how the years have flown by so fast and what is yet to come….a teen who only has 2 more years of schooling before deciding what path she wants to take in life and two little toddler minds to nurture and enjoy…….
